with our signature 521 BBQ rub, and then smoked for 14 hours on
our premises. The BBQ you order in the restaurant today was
rubbed and cooked last night! We do not re-heat or use
leftover BBQ from another day -- every bite of BBQ we serve is
always freshly smoked.

Signature spices and smoked for several hours throughout the day.
Upon ordered, they are brushed with our famous 521 BBQ sauce and
then grilled to caramelize and seal the taste. Superb!!

fresh daily on the premises. We estimate the amount to smoke
based upon previous sales. Since we don't serve re-heated
BBQ, on occasion we may underestimate the demand and will run out.
